Removing items from the dock

I have sort of a dilemma. Some of our labs have both iWork '08 and iWork '09 installed on them. This causes problems because iWork '08 is sometimes being the default to open up keynote files and pages files, which brings up an error is they were saving in iWork '09.

Unfortunately iWork '08 is in the dock (not controlled via Casper, it was created manually). Is there a way to make iWork '09 be the default via a policy, or remove Keynote and Pages and add the new versions onto the dock?
