Separate dep and user initiated workflows

I am quite new to Jamf and just wondering what is the best way to make policies that apply for dep enrollment and what for user initiated.

For example dock and finder preferences. For new Mac with dep enrolled it is fine to those standards. But if existing user of macbook do user initiated enrollment those setting should not screw up the users own settings

You could scope the dock policy to a smartgroup that leverages the "Enrollment Method: PreStage enrollment" inventory item. That way it only grabs machines that have been DEPed.
