Well one way that would be easy is to capture the plist in Composer and make the package a DMG and upload to the JSS making sure to check "fill existing user home directories".
Make a policy with a custom trigger named something (e.g. "installmyplist")
In your script call the custome trigger with
/usr/local/bin/jamf policy -event installmyplist
