not in education, but i've used backuppc in the past with good results.

if you're looking for open source options, backuppc or bacula are probably fine.
otherwise, use crash plan if you can.
also, if you're backing up user data, be sure to include policy about what gets backed up, when, and also your and your users' responsibilities for the backed up data and retention.
dropbox and other sync clients do not equal backup.
