Some printing challenges to ask the group:
First, how do you handle capturing printer preferences on your
deployments? We've been using Casper Admin to grab printers but this
doesn't grab the prefs as well, like setting duplex printing as
standard. So... do any of you use Composer to snapshot printer
additions and preferences? If so, how does it work for you?
Second, we're having some printers delivered to our lab before
deployment on our network. This means they will NOT have their final
DNS/IP information. Is there some way to capture these printers at
their test location but use those captures once they're at their final
destination? Perhaps modifying the hosts file?
Just curious. Uncharted territory here and any advice would be faboo.
(That's how we talk out here on "the coast", of course...)

i usually use the luggage to pkg printer configs, not composer.
see this for an example: https://github.com/unixorn/luggage-examples/tree/master/printer_installation
for the machines that aren't configured as they will be yet, assign IPs for them now so that you can prep the config ahead of time. when they arrive onsite, configure the printers accordingly, and you shouldn't need to change the clients (if they already have the config files in place).

Where needed I have actually gone in an edited the PPDs before capturing
the printers in Admin.
I don't know about setting duplex printing but for Xerox I have been able
to disable banner sheets, set accounting types and remove all the
extraneous options that aren't in use by doing it this way.
It takes some experimentation and some time to learn what the PPDs are
doing but now that I know what I am looking for in a Xerox PPD I can edit
them in seconds.
