Is there a possibility, in a configuration profil, to setup an Apple ID ?
I try with Exchange Active Sync but it doesn't work.

+18I don't think this is possible.
There are quite a few steps for creating an Apple ID (security questions, date of birth, address etc) so other than directing users to the sign-up page a profile couldn't really do much else.
