Im keen to understand the benefits of imaging in the workplace?
We typically boot a device out of the box, create a local profile then let DEP do its business to enrol, once enrolled we then have various policies and profiles pushed to the device.
The client is then ready to issue to the user....
If we receive a device back we typically erase via Jamf, reinstall OS and put it back in the box ready for the next user...

That is the actually envisioned workflow for macOS 10.13.x High Sierra. Imaging is starting to slowly go away though it is still possible. Just not recommended.
I do have an NetInstall image on the NetBoot server that makes that OS reinstallation go locally for part of it's traffic, but if you are already doing DEP enrollment, I recommend sticking with it and doubling down coming up with policies and packages that do your bidding.

So, out of curiosity why are you creating a local profile? The add a user work flow in dep should create a local user for you.
As for the rest of your work flow, we do close to the same. We just drop the base os back onto the machine (we haven't had the touchbar activation fun to deal with yet, but it's coming)
