Hello, within the Jamf Pro training, they speak about a place here in jamf nation where we can download EA, is this no longer available? can't find it.

I believe the 'EA' portion of Jamf Nation went away with the overhaul done last year, but there are the extension attributes that did exist on Jamf Nation. 

There are also EA templates in Jamf Pro that you can add as well:
