Local accounts but with some folders redirecting to network shares

I have a requirement to create a lab of 12 macs that will be used for video editing, mostly with Adobe Premiere Pro CC. My superiors have told me that we can't trust our students to drag and drop files to network shares at their end of their session and they must be able to log in to a different Mac in the lab and pick up where they left off.

I've read that a lot of the Adobe products don't work very well with pure network homes, so I'm thinking of going with mobile AD accounts which is what our staff Macs have, but redirecting some/most local folders to network shares like Documents etc.

Does anybody else do things this way? Exactly which folders should I be redirecting, and which ones should remain on local disk? My scripting skills are pretty much zero - is anyone willing to share a script that works well for them?
