Any idea why I every time a machine netboots from my lion server I get a
new netboot01, 02, 03, 04 account created?

If you're booting diskless, that 01,02,03 etc is temp space stored on the server used by the client. You can safely delete it as it's mostly just a swap file and a few other odds and ends. If you find your disk space low on the drive that hosts your NetBoot images, look in the NetBootClients0 folder and you'll see all those files. You can kill them safely and restart the service.
