Non-Volume license Microsoft office deployment

My company is not large enough for the volume license to be at all worth it.
Has anyone come up with a creative way to use Casper to make this a less painful process?

Is there a way to use one file for deployment as long as we purchase the right amount of licenses?

Use the downloadable trial. Install it and package it up. When it's launched on an imaged system, it'll say the trial is over and prompt for the license key immediately.

I seem to recall (back in my consulting days) that you could get a pre-licensed version of Office with as little as five or ten seats. It's been a few years but you might want to look into it.

You can get it as little as a few computers. The problem is it costs more than the retail version because it includes Lync and a few other features that small shops don't use. It may make deployment easier, but it costs more than buying retail copies off the shelf.
