I just wandered through the OS X Lion Technical Training documents in Apple's Sales Training courses (http://salestraining.apple.com/). If you have access to Apple Sales Web (ASW) you should have access to these resources.
They are PDF documents to refer against and then later take an online exam. That is honestly not my interest, but they are full of great information on managing Macs at an enterprise level. Lots of references to tools and best practices.
I put them on my iPad and can definitely see them coming in handy in the future.
