Replacing plists

Is there any way to leverage Casper to replace *part* of a plist? I need to
change a file association but don't want to affect all associations in the
Finder. I know which key to change but I can't think of a way to do this.

Otherwise, how do you generally do this on multiple machines? If anyone can
share a sample script for this (a *sed *command?), I'd appreciate it.

look at the earlier PlistBuddy emails today, that’s where I would start.
