Self Service - Software Update (Restart not working...or is it?)

Simple setup.  Offering staff the option to use Self Service to update their current version of Mac OS with os/security updates.   Have a message in Self Service, it will take up to an hour.....etc.  This used to work fine but seems to now run, but does not automatically restart on Big Sur.  Haven't tested yet with Monterey.   We tell users it will install the updates then restart if needed.  It seems to install the updates, but they don't apply until the restart.  Am I over thinking this?  I guess its fine to just let the updates run and let the user keep working and restart at their own convenience?  I prefer to have it restart when completed to apply the updates immediately and not sit there for days on end, as so many of our staff do.  Have to twist arms just to get a restart once in a while.  Is there a difference with Intel and M1?  Any advice is appreciated.
