Set Finder Desktop to solid colour in Catalina

Hi all, is there a way to set the Finder Desktop colour to a solid, prefer to use one of the default Apple colours in System/Library/Desktop Pictures/Solid Colors.

Haven't found a "defaults" value or command that can be used in Catalina, past posts with similar requests seem to stop with "Sierra"

The reason for this is Remote Access via ARD or NuoRDS over various speed links for remote students. Having a solid colour gives the students a better experience than an image (although we could use an image of a solid colour).

You're probably best served using a config profile (Restrictions > Functionality > Lock desktop picture) but the steps mentioned here could be used as well.
