This Fall we will be significantly increasing our device load on the current JSS server. Right now it is a 4x core Xeon with 8GB RAM. Runs fine but has had some 'slowness' issues this past school year. DB is local.
This Fall we will be hitting 6K iPads,500 Macs, 5K users and over 500K VPP licenses.
I figure my options are:
1. Move to an external DB
2. Cluster JSS
3. or Move to a big, beefy server
Anyone have any experience with JSS performance with these numbers? Any recommendations?

A clustered JSS behind a load balancer is going to give you failover as well as load balancing. I would do that with some basic linux boxes and a third box as the database. Just use basic machines (8GB ram, little hard drive, etc.)
Your numbers can be done with a single, strong server. Self Service puts the highest load on the server so if that is very active it may get slow.
