Is it safe to just drag the App from /Applications to Composer and package it up in a DMG?

Yes...but when you will have stay on top of updates. If the user tries to update they will get prompted for the app store account that downloaded it.

MacUpdate keeps track of a non-Mac App Store version download that you can install instead. It's how I distribute Evernote to my users, who then keep it up to date themselves.
