We have several builds we want to hide from our deployment team to
reduce confusion, mostly old configuration (10.4.x), test configs, etc
Is there a way to hide them so they don't see them w/o us actually
deleting them?

I don't believe Casper has any means of hiding a configuration. You can,

We generally put "PROD" and "DEV" before the name of the build so that our
folks know which to use/not use

I always put the word "test" in my test builds. I also use auto run data so the proper config is ensured

However, I think Jamf may be able to in the future set up access to
specific users. If you set your package info to testing, and not
deployment. There should be a way to restrict JSS users from accessing
any package that is in the "testing" phase. Which you set in Casper
Admin.
