Good morning,
I'd love to inventory my servers, but I would like to make sure that no policies get executed on them. I don't want anything to happen if a mistake is made while creating a policy.
Do you have any idea about how to do that ?

I made a managed smart computer group with the option "Operating System like server" and exclude it from policies I create.

Depends on what you want to get out of having them inventoried.
You could have them managed and you really just need to take measures to exclude them and scheduled task scopes, policy scopes, and smart groups. As already mentioned I also use criteria in smart groups for OS not like SERVER.
If you just want hardware info in the system you should still be able to add inventory records manually, or run the Recon.app on the box to get that information in.
If I recall it was recommended to not have your JSS as a managed system. I would argue to not manage any of your Mac servers, since the sys admin should have total control over upkeep and eliminate any possible variables of a problem. The less unnecessary things active on the server the better.

We just keep servers out of all of our smart groups using the “Server OS not = ‘Server’” way as mentioned. Our ‘All Staff’ and ‘all computer’ groups exclude servers.

add the casper binary but do not manage them. Create a new quickadd
pkg, and do NOT check the box that says ensure this machine is managed.
That way they will be inventoried but not managed. You also lose the
ability to put them in smart groups if they are not managed though, FYI
