Our infra team changed the wifi password for an SSID that was also being user for an iPad in our office, the iPad itself is in single app mode by a configuration profile.
Problem is, it cannot access the internet anymore and obviously jamf commands do not work on it, apart from wiping the machine itself, are there any other options we can use?

Could also try connecting/tethering to Apple Configurator for Mac.

Connect the iPad to the internet via adapters. If lightning, use a Lightning to usb, usb to ethernet. If USB-c, use USB-c to ethernet adapter. Connect to a network without certificate requirements. Should let it check in and get the latest update.

I encounter a similar issue regularly in our environment since all of our iPads are locked in SAM. This is kind of a pain, but connect the iPad to a Mac running Apple Configurator. Trust the device on the mac side and then hard reboot the iPad. You may need to do this a few times, but you're basically trying to get the ipad into a state where it pops up a prompt to trust the mac it's connected to BEFORE the SAM profile takes over. Once you're able to trust the connection to the Mac, the iPad will share internet connection from the mac and you can rotate the WiFi profiles on the iPad and/or pull it out of SAM to reconnect to the Wifi network with the right SSID and password.
