I work at a k-12 school district where we currently have around 600 ipads in use. We have been using MAAS 360 for the last few years but I've been told that we are switching to JAMF. Does anyone have any tutorials on how to make the switch in terms of getting the client onto the ipads?

You need to do the following
Here's a link to help you get started - https://www.jamf.com/jamf-nation/articles/359/integrating-with-apple-s-device-enrollment-formerly-de...
once you get JAMF - reach out to your "Jamf Buddy" they can do a Jumpstart for you and guide you through the steps. Your JAMF Buddy is going to be your best friend & the best resource during your onboarding process -

The easiest routes would involve wiping the devices. Best sources for tutorials/steps is going to be the Jamf documentation. Really briefly:
If the iPads are in DEP, issue a wipe command with MaaS 360, then reassign them in ASM to the Jamf Pro server, scope them to a Prestage with minimal setup steps, and walk the devices through it.
Alternately, if you don't have DEP or access to ASM and the JSS for the steps above, use Apple Configurator to wipe and enroll the devices.
If wiping the devices is unacceptable, there is still a route. Have MaaS 360 send an unmanage command (possibly called Deactivate Device), then visit https://yourjss:8443/enroll on each device to renenroll them in the JSS.
