I just created an OS X 8.1 NBI and OS X 8.1 Macintosh HD dmg using Composer with a MacBook Pro 2.3 GHZ Intel Core i7.
Because it is an 8.1 build will this:
a) boot a MacBook Pro with a Retina display properly?
b) Install the Macintosh HD dmg properly on a Retina?
I guess what I am asking is has Apple stopped the fork builds and supported the Retinas with the 10.8.1 update? Dot releases typically do, correct?

It should work fine on both accounts. I actually boot our MBPR with a 10.8.0 NBI just fine as that's what most of the later models shipped with. As far as restoring DMG's onto a machine, I would suggest looking at Filewave Lightning. It's creates unbooted clean ASR ready DMG's. Oh and it's free.

I created a 10.8.1 NBI (with the 10.8.1 installer) on a Macmini5,3 (latest server model) and then copied it to our NetBoot servers. The mini, a Retina MBP (10,1) and a MacBookAir5,1 all booted it fine.
During image creation on the mini, I also plugged in the USB-Ethernet & ThunderBolt-Ethernet adapters so it knows about those ports. Don't know how well it would do on the MBA & Retina MBP without doing that.
