We have a relatively small Mac population, but have a huge PC
population. On the PC side when an update comes out and gets tested and
prior to deployment we send out an update notice via email.
Our Macs use the internal SUS which downloads the file, and then via
Casper a policy is in effect to install the updates at next login.
My question is what do you do to notify your end users that an update is
incoming? Is there a popup that can be triggered to say Software
Updates are incoming or do you manually notify the E.U.? Do you not
tell them anything?

John,
We have a scheduled outage each week in which updates are applied (Saturday 8-11am), if the user has a laptop the the updates are applied on next login to the network. All users are aware of this schedule and if need be work around it.

once the updates have been tested, i copy then to Casper Admin and install at logout via a scoped poilcy for those macs that dont have the updates and a lock screen is activating informing the user that an update is being installed and not to shutdown and that the mac may restart. we do not use SUS ever as we pre test and approve ALL updates including office, adobe etc
