DNS settings being overwritten

Students figured out if they change DNS settings to manual, they can bypass OpenDNS rules. 

any suggestions?

Should be in the Restriction's payload of a Configuration Profile. Though I thought you needed admin access to modify DNS settings?

What about for iOS? What is the best way to search for those that have changed DNS settings? While we can lock the network settings at this point we might have some locked in 8.8.8.8 or 1.1.1.1.  We also need to accommodate  students entering in home wifi creds.
