Identify MS Outlook config status

Our users are currently able to use either Apple Mail.app or MS Outlook 2016 for e-mail access ( we currently are using hosted Exchange/O365 for mail.) We would like to have a handle on how many of the users have actually configured their accounts in Outlook. Is anyone aware of an extension attribute that would be able to display the Outlook configuration status?

This is where the profiles get created by Outlook 2016, if you knew which user on the machine you wanted to check you could just look for the existence of this folder.
