I am about to update my jss server and am having trouble finding what I need to back up first etc... before installing

You can find the JSS Database Utility here: /Library/JSS/bin/JSSDatabaseUtil.jar
You can just double click it.

Instructions for upgrading the JSS are listed within the release notes documentation. This can be found by opening the 8.71 Casper Suite DMG that you downloaded or by going to http://www.jamfsoftware.com/resources/documentation and selecting release notes. Not sure if the documents mention it (I'm sure they do!) but if you've made any changes to the files in the tomcat directory (e.g. to add non-apple apps to the Dock configuration profile) then you'll either need to grab those files before the upgrade and replace them after the upgrade, or make the same modifications the the tomcat files.
