No you don't have to do all that. You just go to Settings > Jamf
Applications > Jamf Connect, hit Edit next to the configuration profile
and update that profile to 2.44. Will update the scoped Macs without
issue.
That would be up to you and your needs. If 2.39 does everything you need
it to do then you don't ever have to update from that. If a new version
releases with features you need you can update the profile to that

2.44 is stable. When first set up I was pushing from a config profile
but ended up switching to just using the Mac app option. It keeps it
updated automatically and have not had any issues at all.
Yes on reboot FileVault will bypass jamf connect and take you straight
