How are you doing K-12 iPad backups?

Hello all, we are currently discussing ways to allow students to back up their own data. One of the sticking points is in the apps that only allow backing up to iCloud and not google drive, etc. We are also trying to figure out how to have students only backup school data and not pictures or videos that will chew through iCloud storage. Does anyone have any specific ways to to manage this? Do you just tell kids to backup or do you have a solution that does it for them? iTunes backups are out of the question for us.

We are a private High School with a 1:1 iPad program. All iPads are in DEP and students to not have the Apple App Store, but source all apps through Self Service. Apps are assigned to devices so students do not need to use their AppleID except to buy books and backup to iCloud.

Our principal note taking app is Notability and that can back up to either iCloud, Google Drive, Dropbox, Box or WebDav. We tell students to back up to both iCloud and Google Drive. We tell them to use Google Photos, not iCloud for pictures/videos. We do tell them that backing up a PC is pointless as the data cannot be recovered later if the device is reset.
