Well we had a good run, but our teachers are now wanting the students cut off of gaming and only able to access our Self Service.
Is there a way for me to take away the app store and hide all apps they already had installed that aren't in Self Service? I'd prefer not to have to go to each device and delete the apps.

Unless you pushed them out using managed distribution, there isn't a way to do that. We collected all the student iPads over the summer and removed their apps that were not allowed when we moved to the app store being off full time. Good luck!

Yes it is possible. Just do not enable the restriction to enable app installation as a config profile. We had all our students update to iOS9 and then I took away the App Store last month.
We are using DEP & MDM. All our iPads are supervised.
A small number of problems followed. All related to individual AppleID's. At some point we will move to device assignment for apps but not sure when yet. When that is complete I believe we will be much better off.

If I remember correctly, wasn't it possible to quickly leave Self Service after starting an installation then open the App Store while it briefly re-appeared? Is this still an issue with going the Self Service-only route, or has it been resolved?

bbelew it is possible I'm maintaining 700 iPads with no App Store as Device Management and works great, also in my restriction i have disable the game center and a few other related items.
In my profile i created if MDM profile is removed it will remove everything else apps and settings that I'm blocking.
It has worked great and i have other groups for teachers and faculty where the App Store still exist just under another group and different settings.
