On a test box I'm netbooting off a 10.7 image on a 10.7 server... casper
imaging 8.21 launches normally. The problem is that when I launch
diskutility to partition the drive, it says it can't unmounts the disk
(I verified I have the correct disk). So I tried in terminal to
repartition the drive and I can't do it there either.
If I target boot the machine, then I can format / partition the disk.

Err.... After I checked Diskless (still not sure what it means). The
formatting seems to be working better.

If you're not NetBooting diskless, the client machine will use the internal drive for temporary storage. As it's in use, you can't unmount it to format it. Diskless stores all temp data on the NetBoot server.

Okay, so I don't understand this...
I did the diskless option, it formats and installs perfectly...
Reboots.. and low and behold - it boots to a recovery partition.
Reboot again... recovery partition..
So I hold down alt / option and the only partition listed is recovery
partition... so I open terminal and diskutil list and it shows disk0s2
as the main hd...disk0s3 as recovery and disk0s4 as "Blank", then it
also shows disk2, disk3, disk4, ..., disk8
Before I imaged this box I removed ALL partitions through terminal's
diskutil, then went into diskutil GUI and created a new single
partition.
Now, the kicker is that if I target boot the box, I run the same image
profile, then it boots to lion, not the recovery partition.
